Below you will find my quick and dirty Nachos and Cheese Recipe, perfect for Netflix and chill.

In the interest of transparency, I want to make it clear that I zero self-restraint when it comes to nacho’s they are my guilty passion…. I will try to make them given any excuse. I’m aware it’s not the healthiest and not something everyone’s likes but who cares they are mines and I <3 them!!!!

This is what I live for at the weekend after getting out and having fun!


Nachos and cheese recipe

This Recipe for nachos and cheese is nice and quick, to the point, it can almost be made during the add break. When me and my co-pilot hit go, its 5 minutes max, I make the sauce while my wife makes up the plates. Teamwork makes the dream work!

What you will need

  • cornflour
  • Cheese (100g mature cheddar)
  • Milk (300ml) maybe a little more if you prefer it very runny
  • nacho’s of choice
  • topping to your taste ( i like to keep it simple lots of sauce and lots of pickled jalapenos )

Get your self a pan and fill it with 300ml of milk and turn the hob on to a low heat

Cut up 100g (or less if you’re keeping it healthy haha)  of cheese we only use mature or extra mature cheddar when making this so depending on what you have and how strong a taste you want, adjust to suit

adding in the corn flour


Add in 2 heaped tablespoons of corn flour and stir in breaking up any lumps

Normally by the time the milk has heated up the cheese has melted and the cornflour will start to thicken the sauce

Sit back relax and stuff your face with Nachos and cheese

 

A word of Warning! 😆

If you plan to make this nachos and cheese dish, it’s worth knowing that If you add too little milk or too much cornflour, You will up with a substance that resembles rubber, I can confirm that this is inedible it may seem ok at first but once it starts to cool it will start to solidify in your mouth making life unbearable especially when the wife is watching and laughing as out of principle you don’t want to admit you messed up…. I’ve found it easier to save a runny sauce compared to one that resembles a cheesy stress ball so bare that in mind 😅
